The Name
Two thousand years ago, the Nazca people etched vast figures into the desert — lines so large they reveal themselves only from the sky. NAZCAA borrows that intent.
Our cooking is Beyond Nikkei — the meeting of Japanese precision and Peruvian fire — composed with the same patience, and best understood from a height above the city.
Philosophy
Precision is Japanese. Soul is Peruvian. The ritual is ours.
The knife and the grill give us discipline. Aji, lime and corn give us colour. Together they become a sensory journey that unfolds course by course, after dark.
The Kitchen
Binchotan charcoal and Andean spice on the robata; tiger's milk and yuzu in the cold kitchen. Every plate is a line drawn between two coastlines.
